I love this cheese! I've been making it for years now. It reminds me of the pump cheese for sporting event nachos but has no mystery chemicals in it. I've found if I mix the other ingredients while the carrots and potatoes cook the elasticity of the cheese improves. I also don't usually peal my vegetables which discolors the cheese a little but leaves in more fiber.
